Chicken Curry Salad (serves 1)
4 oz. cooked chicken, diced
2 Tbsp. red onion, diced
2 Tbsp. mayo (preferably avocado oil based) OR greek yogurt OR unsweetened plant-based yogurt
1 tsp. curry powder
1/2 apple, chopped
1-2 Tbsp. chopped cashews
Salt to taste

Oatmeal is great, add flax seeds, hemp hearts, protein powder and peanut butter keeps me full for hrs!
