In Romania, we make sweet things (like pies and Easter Cake (pască)) with farmers cheese (like cottage cheese but tiny curd). We always also add raisins that were kept in rum for anywhere from a few hours to a day (and I think an egg). There is no better pairing than sweetened farmer’s cheese and rum raisins. I live in the US and I can find farmer’s cheese at any Middle Eastern grocery store or the rare Eastern European grocery store.

Sweet breakfast quesadillas are the best. I usually put peanut butter, banana, and a pinch of sprinkled sea salt inside the tortilla with chocolate pb2 drizzled on top or on the side to dip. Then I have cottage cheese as a side dish for more protein.

I made this for breakfast today, I wasn’t sure at the first bite, but I shared one with my mother and made another one for me after trying one. I like that it’s not overly sweet!
I do this but with a base of PB and cottage cheese, then fold in a way that can go in the toaster at work!
I used to work for an after school program and I taught the kids a super similar recipe for our “eat the rainbow” club. We did a flat tortilla with greek yogurt and a little vanilla extract them lots of fruit on top. We called it a “pizza”
