Today I'm sharing my SUPER TASTY blueberry smoothie recipe that's high in protein. I've been obsessed with this combo lately, especially because of its additional gut health perks.

Minty Blueberry Smoothie Recipe:
1 cup unsweetened kefir (or coconut kefir if plant-based)
1 cup unsweetened almond milk
2 scoops Autumn's Vanilla Protein Powder
1/2 cup frozen blueberries
1/4 cup fresh mint (or a few drops of peppermint extract)
1 Tbsp. chia seeds
1-2 Tbsp. coconut butter

      Both – she used 1 cup of kefir and then thinned it with water because she didn’t have almond milk on hand. Use the combo that works for you!

      Hi Kayla! You can purchase coconut butter online (I buy from THRIVE Market) if you can’t find it at your local grocery store. If you have a high powered blender, you can also use 3 tablespoons of unsweetened coconut flakes in place of 1 tablespoon of coconut butter!

    I dislike coconut butter, it’s texture mostly. Can I use shredded unsweetened coconut in its place, or coconut oil? Or any other recommendations? Also we cannot get your protein powder in Canada so I use a Grass Fed Beef Protein powder with a whopping 30 grams of protein per scoop and zero carbs.

    I will definitely try this! I like to use coconut water to thin my smoothies! When I have time to sit and enjoy a smoothie, I love the combination of smoothie, pistachios (in the shell to slow my consumption) and a cup of coffee – Yum!
