I had vegan Mac & Cheese for dinner tonight made from carrots, cashews and soya milk with a teaspoon of English mustard and a teaspoon of black pepper with whole wheat pasta and it was delicious! ๐Ÿ˜‹.     You always seem to have better stuff in your Costco in Canada than what we do here in the states, at least in Colorado. Will be looking for some of that stuff next time and keep my fingers crossed. Great, fast meal ideas, which I am always looking for, especially in the summer.

    You can coat the asparagus with the aquafaba from the can of chickpeas instead of oil for no fat!

      You can also toss frozen veggies in a much heavier sauce, because the sauce will stick to surface of the frozen veggies. I think both broccoli and asparagus go well with a sauce made of apricot jam, sambal oelek, nutritional yeast, grated garlic, curry powder, and garam masala.

    You might want to try the Berry Banana Quinoa bake from Mastering Diabetes. I use the blackberry, raspberry, blueberry blend and add the thawed fruit when serving to preserve nutrients.

    For the first meal I think I have all of those ingredients in my freezer except the Mushroom crumble but I have a different crumble LOl. The little ๐ŸŠ oranges I always have those on hand. I will have to look for those almonds next time I’m at Costco. Thanks for the simple recipes ๐Ÿ˜Š

    I buy big bags of potatoes, onions, mushrooms and sweet potatoes at Costco, too. I just boil the potatoes and sweet potatoes, and we mash them up. Serve mash with mushroom gravy, along with a salad made from their pre-washed greens, carrots, celery, Persian cucumbers, onion and some of your tasty dressing, and some easy-baked, tasty tofu. Iโ€™ve learned from you to keep it simple, yet tasty!โคโค

    I’m always jealous about what Costco in Canada has that we don’t in the US. Happily, we do have the Pura Vida primavera mistura veggies, and I’m obsessed! I always have at least one bag in my freezer.

    Costco in my area hasn’t sold Dr Praeger’s California burgers for years, since they got Impossible burgers and decided to only carry a single veg option. But BJ’s does have them (you can usually find a $20 membership offer online). I only cook them in the air fryer, and they get very crispy.

    Good morning! I just discovered you about a week and a half ago on my whole food journey and I purchased the 3 of your books because your sauces reeled me in LOL Without said I haven’t watched many of your newer videos yet but there is a lot of processed food in this video?? My personal opinion is that it’s always best to chop your own vegetables and make your own meals especially those burgers that you showed as much as possible if we are trying to stay healthy. Just because it’s plant-based doesn’t mean it’s healthy. I still love you and God bless!โค
