This no-churn chocolate ice cream comes with all the chocolate flavor, creaminess, and light texture you would expect from regular chocolate ice cream. Yet, this ice cream is not churned and doesn’t rely on any dairy.

The recipe is vegan (dairy-free, egg-free), grain-free (gluten-free), soy-free, and refined sugar-free.

    Always great content. Does the whipping warm the coconut cream? Should I freeze my beaters or return the mixture to the freezer during the mixing process?

      A great question. I always start with a pre-chilled mixing bowl and beaters (you can sort of see it in the video, but I did not mention it) and I try to work quickly. However, when I was filming the recipe, I definitely did not go as fast as I normally do because I was changing camera angles, etc. and it still turned out great. Now, if you don’t have your date paste ready, I do recommend making that first, THEN whipping the coconut cream, and then assembling everything. If you make the whipped cream first, yes, it does help if you return it back to the refrigerator while you’re making the date paste.

      Ah, I just checked the recipe box on my blog and realized that I forgot to add that conversion. Thank you for pointing that out! It has now been added. To answer your question here, you’ll need ~ 3 cups (450 g) of Medjool dates to get 1 1/2 cups (450 g) of date paste. Hope you enjoy the recipe 🙂

      @NutritionRefined Thank you for the quick response!!! I just assumed that 450g of Medjool dates will give less paste as it wasn’t mentioned if the dates are pitted or not. I guess a few grams difference might not matter so much but too sweet an ice cream is not to my taste so I wanted to be accurate.

    Looks great, I’m interested in trying date paste like this. 1:35: I notice you don’t measure in your videos. Is that just for videos or how you usually make your recipes? 🙂

      Well, it depends. If the success of the recipe depends on specific measurements, such as tempered chocolate, I do measure the ingredients ahead of time (or after I have filmed a specific shot). You just don’t see it in the video. Some recipes, such as granola, are quite flexible and I have made them over and over again, so I don’t feel like I need to measure the ingredients anymore. So yes, I do measure. Sometimes.
