Hmm, I have been vegan for 14 years and I still ended up with varicose veins and other unpleasant things you mentioned after menopause. I eat tons of fiber. So I think, in this case, there’s more to it than just fiber.
I’m a 50 year old menopausal vegan, too. I find that in addition to my whole foods, plant based diet, EXERCISE everyday really, really helps. I do a moderate jog with my dog for about 10-20 minutes along with miles of walking. I also find that sweet potato is the absolute best food for constipation.
The more that you are talking is exercise, just keep moving, every day without any excuses, for your own sake.
How much fiber, fat and salt have you eaten?
Salt is probably a factor too, because it causes high blood pressure.
While it is true that there could be other factors, your anecdotal evidence is very weak to justify this, because living a healthy lifestyle does not mean that your body will not age and deteriorate over time, but it will usually happen at a slower rate than if you had lived a less healthy lifestyle. So you should flip the script and say that things could have been a lot worse without your healthy lifestyle.
(Also note that these studies look at the average population, not at the individual level. So what works for the average person may not work for you).
Yes, I do exercise every single day (cardio, strength and yoga) and have for decades, though I was raised with horrible processed foods. I guess one can only do so much to counteract that, and yes, it could be a lot worse. I am on no medications like most of my peers, so I will be grateful for that.

More about varicose vein, please! Is it reversible by dietary means?
I’m male, and I first recognised my varicose vein at around age 25. My diet, when I was young, was very high in saturated fat and salt (pizza, sandwich, etc.), and very low in fiber.
As a kid I thought they were called “very close” veins, since they were close to the surface. Silly, I know.
35 year old male here, I started noticing varicose veins on age 30, I am not an unhealthy person but I am probe to this since it runs on my family. I found that eating a good vegan diet helped yes, but regular exercise helped me a lot, that and having a standing desk. (IMO you get more out of doing regular exercise) Currently I am on my 2nd year of going 5 times a week to the gym, I do whatever I find interesting and fun, some days I do cross training, other days cycling, other days strength training, I reduce my varicose veins by a lot and is not as bad right now.
