Today I'm sharing 3 easy high protein meal prep salads that will ACTUALLY last you the entire week!
🫘 Beautifying Arugula Salad
Serves 4-5
Ingredients:
1/2 of a 15 oz. can kidney beans
1/2 of a 15 oz. can chickpeas
2 avocados, cut into cubes
1/4 cup sunflower seeds
1/4 cup hemp seeds
3 Tbsp. apple cider vinegar
1 lemon, juiced
1/4 cup olive oil
pinch of salt
20 cups arugula (4 cups per serving)
1 serving cooked protein of choice per serving of salad (ex: 4 oz. grilled chicken, 5 oz. tempeh, 4 oz. salmon, etc.)
🍋 Lemony Kale Salad
Serves 1
Ingredients:
2-3 cups kale, chopped
1/4 cup red onion, chopped
1 lemon, juiced and zested
1 Tbsp. olive oil
4 oz. cooked protein of choice
.5 oz. pecorino or parmesan, shredded OR 2 tsp. Nutritional yeast for a plant-based swap
1 Tbsp. toasted pumpkin seeds
1 Tbsp. toasted sunflower seeds
heavy pinch of salt
pinch of red pepper flakes
🍎 Apple Beet Slaw
Serves 4-5
Ingredients:
1 large beet (red or golden), shredded or thinly sliced
1 granny smith apple, chopped
1-2 cups green cabbage, chopped
1 cup cilantro, chopped
1/2 cup green onions, chopped
1 lemon, juiced
1 Tbsp. dijon mustard
2 Tbsp. olive oil
1/4 cup sunflower seeds
1 cup chickpeas
Heavy pinch of salt
4 oz. cooked protein of choice per serving of salad

Great recipes to try! I have thrice and LOVE everything about them. They bubble wrap all glass items and also use thick paper inside every box. Every time I open a box I think “why doesn’t Amazon load my boxes this way?!”

Does the dressing stop the apples and avocado from getting brown?
Love your channel and all of your recipes and information. It’s really helped me to finally get below a number on the scale I haven’t seen in a very long time! I noticed that you’re not draining the beans you’re using in the salad recipes. Is that correct? I have been under the impression that you need to drain canned beans.

Yum! I make creative salads too. Greens from the garden, purple cabbage, red beets (red hands too 😀), other veggies, nuts and seeds, and a little fruit. Pink grapefruit is a delicious fruit addition Extra virgin olive oil and red wine vinegar for dressing.
