Breakfast Sandwich Recipe
3 Bagels, cut in half and toasted
425g (1 large block) of firm tofu, sliced into three pieces
3 thin slices for red onion
1 large tomato, sliced
3 slices of cheese (I used Vio Life)
3 tbsp ketchup
Tofu seasoning
1 tsp onion powder
½ tsp turmeric
½ tsp garlic powder
½ smoked paprika
1 tbsp nutritional yeast
2 tsp maple syrup
½ tsp salt
Dash of black pepper
5 tbsp water
Directions: Marinate tofu slices in seasoning overnight, or for a few hours. Bake for 30-40 minutes at 350F. Remove and let cool. Build the sandwich with the rest of the ingredients. I also added a banana to each meal prep container to go with the sandwich.
Veggie Casserole
¾ cup dry quinoa
1 ½ cup Textured Vegetable Protein (TVP)
4 large mushrooms, chopped
1 large red bell pepper, chopped
½ onion, chopped
3 cups frozen broccoli
1 cup canned chickpeas (drained and rinsed)
2 cans of soup, I used Sprage Organic Lentil Soup
1 tsp garlic powder
1 tsp onion powder
Dash of black pepper
1 cup of water
Serve with your favourite sauce or dip, I used added guacamole and salsa
Directions: Add the quinoa and TVP to the bottom of a large casserole dish, then add everything else on top. Bake for 45 minutes at 350F. Remove from the oven and let cool. I added guacamole and salsa to the meal prep container I added it to.
Lentil Pasta
360g (4 ¼ cups) Lentils pasta
6 cups pasta sauce, I used Simply Organic Pasta Sauce
3 cups frozen veggies, I used fire roasted vegetables
6 tbsp hemp seeds
Directions: Cook pasta according to package instructions. Drain and set aside. Cook frozen vegetables in a large saute pan over medium heat. Add pasta sauce and hemp seeds. Cook through, remove from heat, and in a large bowl, mix pasta and sauce together. I added chopped green onions on top after I portioned it into my meal prep containers.

The fire roasted vegetables are the bomb!!! I get 1 or 2 bags every time I’m in Costco. I oven roast mine but works great on the stovetop too!

I agree. 3 days is a good sweet spot. Prep gets a little sour and funky by Friday in my experience!

I just tried tofu for the first time. It’s really good.
I absolutely love tofu so much when we batch cook and 😅 need a quick snack I’ll grab our airfried tofu straight from the fridge and then my husband is like, where’d all the tofu go. 🤣😅

What I feel really helps preserving the freshness of the food is using hermetic glass containers. I usually do more variations within the same meal prep to avoid getting bored by the repetition (2 lunches, 2 dinners, 4 days), although it is a bit more effort. Everyone has a different balance though.
I think doing both 3 and 5 day meal prep is good. 3 day is more so for people who want more variety and are farther along in their vegan/health journey. 5 day is more for people who want simplicity/a more regimented schedule which helps with dieting and if one is busy. Keep up the great work 😊

I’ve watched several prep videos of yours before, and I think this is the tastiest prep ever.
Yep. I’ve made 4-5 days prep before and it always goes bad by the 4th day haha. I’d rather do a cook on Sunday then something on Wednesday night for Thurs/Friday. This is also pretty much the exact macros I need to be hitting right now for a cut, 2000 cals, 130g protein. I’ll definitely give it a go!
If you like bagel from cosco, you can buy them by the box! You go ask someone near the bagels and you can have a box of frozen bagels. You’ll have 13 bags of bagels for like 26.99$ or something like that. I’m in Quebec so the price may be different!
