    Derek, you live in a gorgeous part of the world and I love seeing you out getting your vitamin N, so please keep taking us on your adventures. That salad is so simple but it looks incredible. You have proven your point that you don’t have to spend hours in the kitchen as a vegan cook.

    One thing I like about the States or Canada is the mega sized frozen fruit or berry bags in stores. In Ireland they’re measly, don’t last at all and need to be restocked all the time.

      Yeah they are sad. But in another way, we are lucky as the fresh fruit is much cheaper than in thr states. It is crazy expensive over there.

      I buy my frozen fruit and Veg from Costco. It helps a lot. Most normal grocery stores here carry smaller sized bags, but they are $$ so it’s better to get it at Costco.

    Derik brings up such a good point in this video about the protein. He didn’t try to make any extra added efforts to get to that 150g of protein, it’s really not that hard to get that much protein on a vegan diet. I’m so glad that point was shown in this video!
