Low-Carb Pizza Casserole to Pasta Pizza Casserole – Family Solution

Pizza Casserole (serving: 4)
Ingredients:
1 lb Ground Beef
1 cup Frozen Chopped Peppers & Onions
1 4oz can Sliced Mushrooms
1 tsp Minced Garlic
1 tsp Lawry’s Seasoned Salt
1⁄2 tsp Chili Powder
1 ½ cups Spaghetti Sauce
1 cup Shredded Mozzarella Cheese
1 cup Shredded Sharp Cheddar Cheese
1 oz. Sliced Pepperoni
Directions:
Preheat the oven to 350°F (177°C)
Brown the ground beef (drain excess grease). Add the peppers, onions, mushrooms, garlic, and seasonings, and cook until veggies are tender. Stir in and heat the spaghetti sauce.
Transfer the mixture to an oven-safe dish. Top it with the cheese and pepperoni, and cook for 40 minutes.

Taco Salad to Tacos (shell)
Beanless Chili to Chili with Beans added
Burger on Lettuce to Burger on a Bun
Fajita Bowl to Fajitas (tortilla)
To prepare the Fajita Bowl, I used pre-cooked pulled pork from Costco mixed with a packet of Fajita seasoning. I topped a bowl of lettuce with the seasoned pork, sauteed bell peppers, cheddar cheese, salsa, guacamole, and sour cream.

What about low carb tortillas, they have more fiber, thanks❤
If your goal is weight loss, I’d avoid them. They add carbs, tend to rely on net-carb tricks, and are a slippery slope.
They kick me right out of ketosis, so I have to avoid them just like regular tortillas.
These recipes are so much better than other low-carb and Keto recipes found on YouTube. Those usually involve complicated techniques and weird ingredients. Dr. Becky Gillaspy doesn’t seem to be making us into consumers of ‘alternate’ food products. Just use what you normally have in your pantry and fridge. It works. I stopped eating sugar four months ago and reduced my refined carb intake drastically. Yes, I’ve lost weight, but more importantly I feel healthier, sleep better, and have more energy. At first, I did buy some of those weird ingredients I referred to and tried some of those other recipes. I got tired of it pretty quick. I’m a good cook and am able to come up with really good, nutritious, low-carb dishes fairly easily using the food that I always buy and/or grow on my own.

Dr Becky, for a burger, what are your thoughts on the new Arnold Keto buns. 70 calories, 2 gms of fat, 16 gms of carbs and 13 gms of fiber, no sugar. I buy these and my husband has a regular hamb roll and I have my burger on this. They’re small and light. A little expensive, but it takes me 2 months to eat all 8 of em.
Everyone is different, but I found that Arnold bread and the low carb tortillas both kick me out of ketosis, so I am unable to enjoy them without stalling my progress.

One of my favorite easy meals is the egg muffin. I mix up the eggs, add whatever to the bottom of the muffin tin, pour on the mixed up eggs and bake. Lots of recipes online, my family really likes them, they can stay in the fridge for a bit and are keto friendly.

Thank you! I’ll have to try that Low-Carb Pizza Casserole, looks delicious. One low carb meal I like to make is just frying up some ground chuck, and breaking it up like for sloppy joes, add some yellow onion and some minced garlic. I just eat it with a spoon and have some green beans seasoned with bacon fat for a side.

Cauliflower under the sauce would be a good idea! Much better than low “net carb” tortillas.
Good Morning! I’m sticking my toes into the low carb cottage cheese egg breads. I made my first flat bread yesterday and it turned out very delicous. I did use 2Tbs of grated parmesan. I could see crisping it up in the toaster oven and using it under a fajita mix :). I also use a quinoa/chia seed chip that holds up very well for nachos under cheese and organic madras lentils instead of beef. Keep up the great information you keep sending our way!
I can relate! Whenever I make “spaghetti” for the family, I make it for the kids the traditional way with noodles, but I put my meat/sauce on top of roasted vegetables. Totally works and it’s delicious 🙂
