My 3 Favourite Comfort Foods Made Vegan! π₯
I love re-creating foods I used to eat, but making them vegan and healthier! In this video I make some smoked salmon using carrots, a vegan BLT and the BEST vegan nachos you are ever going to have!
Just because you go vegan doesn't mean you can't still enjoy the flavours that you used to know and love.

Smoked Salmon (Carrot) Recipe:
2-3 Large Carrots
1 tbsp tamari
1 tbsp water
1 tbsp liquid smoke
1 tbsp olive oil
2 tsp maple syrup
1/2 tsp onion powder
1/4 tsp garlic powder
1/2 tsp rice vinegar
1-2 tsp seaweed flakes
Peel and then boil carrots until soft and cooked throughout. 7-15 minutes depending on the size.
Add carrots and marinade into a small bowl and store in the fridge overnight. Mix if necessary to ensure all the carrots get coated in the marinade.
Add to bagel with vegan cream cheese.
Top with red onion, dill, capers.

The Daiya cheese is the bomb! I put it on my eggplant bake and enchiladas! π
We make sandwiches we call BLOATs: (veggie) bacon, lettuce, onion, (smashed) avocado and tomatoes. So good!

Excellent video! It made me think of a great vegan restaurant called Cornbread Cafe that recently closed down in Eugene, Oregon. They served tremendous vegan comfort food!
This comment is about the Thanksgiving stuffing recipe you folks laid on us a couple of years ago, and which I’ve made each Thanksgiving and Christmas ever since. It is so well-received, my little granddaughter even asked to have it prepared for her in Japan last year, where she and her parents were visiting family over Christmas! I felt compelled to write as I have just finished making it. This year I also hit on the bright idea of putting the pecans through my high-powered blender, reasoning that it would get that flavour to pervade the dish even more. It worked like a hot damn! Thank you so much, Crystal and Derek, on behalf of myself and my family!

Great recipes, I’ve tried other versions of the Lox carrot where the marinade includes some capers plus the brine from capers jar and fresh dill, its quite nice, however your recipe has more liquid smoke in it, which I think would work well.π
