Maybe it's the sweet moist cinnamon-y bread. Or the thick lemony vanilla icing. Whatever it is, it's amazingly similar in taste and texture to the baked version of a carrot cake. However, unlike the real deal carrot cake, this raw carrot cake is healthy and super easy to make.

The first time I made this raw carrot cake, I made it into a traditional style layer cake. It looked beautiful, but it was too much work. So the second time I made it, I turned it into a simple two-layer carrot cake with icing just on the top.

This recipe utilizes a natural sweetness of carrots and dates, a flour-like texture of ground coconut, and cream-like consistency of blended cashews. You'll need just a small slice to feel full for quite some time. It's the type of cake that will satisfy your sweet tooth but also serve your body because it's made of real, nutrient-dense food.

    Dear Petra, I really love the baked version of carrot cake and one time I made it without sugar but it was dried you know…not fluffy and moist.
    When I saw your recipe I desiced to try to make it raw. To be honest me and my husband were relally surprised about the wonderful texture and taste it had!!!
    Your version of raw carrot cake is a very successful version in it is so delicious cake!!!

    2 cups raw walnuts
    1 cup unsweetened desiccated coconut
    1/2 cup coconut flour
    1/4 cup coconut oil, melted
    2 Tbsp. lemon juice
    2 tsp. pure vanilla extract

    Use the leftovers from juicing carrots instead of shredding. Saves you time with shredding, you get two uses out of the carrots, and it tastes just as good!
    Also, I think adding a bit of orange zest and a dash of orange juice instead of the lemon is truly yummy.

    Hi, I made your raw chocolate brownies. I had to substitute coconut flour for almond flour and for the liquid sweetener I used a product called Sweet freedom chocolate shot. I cant tell you how good they were; I havent ‘baked’ anything for years as I no longer have an oven, and I just loved the whole creative process. I’ve purchased a kilo of cacao powder, so I’m fully prepared to make several more batches!

    I made thsi today and it was surprisingly fantastic!! Ive tried raw recipes before but thought they were either lacking in flavour or texture and soemtiems had very overwhelming flavours. But this was a great recipe. I actually made a third of the recipe and made it into bars and topped them with a kind of frosting I made just from cashews, plant milk, and some honey. I was so happy that my family also liked it and can enjoy it with me.
    I used normal coconut oil (not deodorised) and it wasn’t overwhelming at all. You can taste the coconut shreds basically. It also doesn’t taste like dates!! I was worried about that cuz I wanted it to taste more like a carrot cake. Good ratio of ingredients. The only difference I made was I added cardamom! Highly recommend
