You NEED to try these quesadillas. These are the restaurant quality recipes that even the most critical meat eating friends or family will love!

Recipes:
BLT Quesadilla

Ingredients:
2/3 block of tempeh bacon (recipe below)
2-3 tbsp vegan mayo (recipe below)
1 handful of spinach
6-8 cherry tomatoes1/4 cup of vegan cheese
Black pepper

How To Make Vegan Mayo:
1/2 block (6 oz) firm silken tofu
0.5 tbsp spicy brown mustard 1 tbsp lemon juice
A big pinch of salt
1/2 tsp onion powder
1/2 tsp garlic powder
Blend until smooth
Marinade for Tempeh Bacon
1.5 tbsp soy sauce
1 tbsp water
0.5 tbsp maple syrup
1.5 tsp smoked paprika
1 tsp onion powder

Method:Marinade tempeh in seasoning as per instructed in the video. Sauté tempeh until brown on each side.

In a tortilla place vegan cheese, tempeh, spinach, tomato, a pinch of pepper and vegan mayo. Sauté on both sides until tortilla is golden and crispy.
PIZZA QUESADILLA

Ingredients:6 Medium mushrooms
1/2 or a large onion
1 green bell pepper
2 plant based sausages
2-3 tbsp of tomato sauce
1/4 cup of vegan cheese
8-10 Black olives
6-8 basil leavesMethod:

Sauté together the mushrooms, onion, plant based sausage and bell pepper until cooked. Add to a tortilla along with vegan cheese, chopped olives, shredded basil and tomato sauce.

Sauté until each side of the tortilla is golden and crispy.

BBQ Soy Curls QuesadillaIngredients:
2 Cups of Butler Soy Curls
BBQ Sauce
Green Bell Pepper
Red Onion
Cilantro

Method:

Soak Soy curls in water until they are fully hydrated.
Drain and squeeze out excess water.
Add BBQ Sauce and squeeze it into the soy curls.

Sauté soy curls until they start to brown.

Add to a tortilla along with red onion, green pepper, cilantro and a little extra BBQ sauce.

Sauté until the tortilla is golden and crispy!

    Get yourself a 14″ cast iron stove top griddle. Works perfect. Lodge makes them plus a few other mfg. at different price points. I make these frequently using all kinds of ingredients! YUM, one of my go to vegan eats!
