I have the same question. In the video she said freezing, defrosting, and then toasting the bread lowered the glycemic index. I think we can assume it’s the same for pasta and rice?
No, it doesn’t change back.
The starches have changed through the cooling/freezing process and will remain in that state even through reheating
Yes, it’s the same.
Rice/noodles/potatoes also don’t need to be frozen, 24h in the fridge will do.
Tested this with my CGM and sprouted grain bread and I still had a significant spike unfortunately π’
The only thing stoping me about meal prep it’s the idea of eating the same thing every day, maybe preparing pasta and rice weekly and making the sauces , lentils, meats fresh would be a better idea for me but still it’s kinda weird (this is just my opinion)
For me itβs all about the freezer. Bulk prep something different every week and then freeze 2/3 of it and defrost other things already in the freezer. Takes a little while to build up the variety but eventually I have weeks where I donβt cook anything just use whatβs in the freezer π
@jessicashumack8428Β yeah but I don’t have a lot of meals that I could just defrost and be ok with it xD for me would be a sin to just defrost a lomo saltado that I made a few days ago like there’s not a lot of meals options (at least for me bc I’m quite particular with food) that I would be ok to not eat fresh
β@@Alejandrapark97 for me personally I try to prep ingredients so that I can more quickly prepare fresh meals. I love wraps, salads, eggs, and stir fry so I just do a big prep of lettuce, peppers, garlic, onions, cucumber and all the other fresh produce that holds up well for several days. Then I bake or grill some chicken breasts and slice them up to be ready for salad and wraps. I slice, shred, and cube some cheese. Boil and peel some eggs. Make a batch of hummus,spicy ranch dressing, and some kind of chicken salad. I have really specific cravings and I get bored of eating the exact same thing unless it’s THAT thing, idk if you have this problem too but I will crave one thing over and over then I won’t eat it for years. π So just having basic ingredients I know I can make various dishes with is crucial. My husband also has different tastes to me but also uses these ingredients to make his own food.
@@Lav3nd3r0h that makes more sense than making various portions of the same food for like a week, my mom do the same, she prepares the “core ingredients” and makes differents things through the week that’s why the concept of eating the same thing for an entire week it’s weird to me xD

Yeah, it works for most, but far from all. It definitely does not work for me. I’ve tried with everything. Even sprouted grain bread sent my glucose soaring. And not for just a little while, but for several hours.
In our house weβve always bought a batch of different breads, put one bag on the counter to eat and freeze the others. And when we ran out, just defrost one of the bags. Also always toast our breads! Tbh I thought everyone does this π
