I can’t help but wonder about cancer though. Apparently according to Dr Joel Fuhrman onions are one of the cancer fighting foods (GBOMBS) and I think you may have mentioned that in the past. It would have been cool to squeeze that in here, especially if there’s any news on that front.
This suggests a [Both/And] rather than an [Either/Or] approach:
cooked yellow onions in the lentil stew — to lower cholesterol;
crunchy raw red onion on top — for enhanced quercetin bioavailability 🙂
this is exactly it! I just made a Korean gochujang Jigae and It has cooked red and green onion, but then I top it off with raw green onion and chives! And with Chana masala I love to have that thick oniony cooked gravy and then eat with whole wheat flat bread and rings of spicy raw red onion 🤤
