Recipes:

Lemon Ginger Energy Balls
1 cup roasted (unsalted) almonds
1 cup medjool dates, pitted
1/4 cup candied ginger, chopped
zest of 1 lemon
juice from 1 lemon 
1/2 cup rolled oats 

Directions:
1. Blend almonds on high in a food processor until they are finely chopped. 
2. Add the rest of the ingredients and blend together until a ball of dough forms. 
3. Remove dough from the food processor and roll into balls (makes approx 12 balls depending on size). Put in a sealed container and keep in fridge or freezer. 
Optional: Roll in coconut flakes 

Cherry and Cacao nib Energy balls
1 cup cashews 
1 cup dried cherries
1/2 cup rolled oats
1/4 cup cacao nibs
2 tbsp maple syrup 

Directions:
1. Blend cashews on high in a food processor until they are finely chopped. 
2. Add the rest of the ingredients and blend together well.
3. Remove dough from the food processor and roll into balls (makes approx 12 balls depending on size). Put in a sealed container and keep in fridge or freezer. 
Optional: Roll in cocoa powder

Peanut butter chocolate energy balls
1 cup rolled oats 
1/2 cup peanut butter
1/4 cup maple syrup 
1/4 cup vanilla protein powder
1/4 cup chocolate chips (or cacao nibs) 
Optional: pinch of salt 
1-2 tbsp of water might be needed 

Directions:
1. Blend rolled oats on high in a food processor until they are finely chopped. 
2. Add the rest of the ingredients and blend together well.
3. Remove dough from the food processor and roll into balls (makes approx 12 balls depending on size). Put in a sealed container and keep in fridge or freezer. 
Optional: Roll in coconut flakes or cocoa powder 

Cranberry Tahini Energy Balls
1 cup roasted (unsalted) almonds 
1/2 cup dried sweetened cranberries 
1/3 cup tahini 
1/4 cup maple syrup 
1 tsp cinnamon 

Directions:
1. Blend almonds on high in a food processor until they are finely chopped. 
2. Add rest of the ingredients and blend together until a ball of dough forms. 
3. Remove dough from the food processor and roll into balls (makes approx 12 balls depending on size). Put in a sealed container and keep in fridge or freezer. 
Optional: Roll in sesame seeds

Carrot Cake Energy Balls
1 cup rolled oats
1 cup (1 large) shredded carrot 
1/2 cup medjool dates, pitted
1/2 cup walnuts 
2 tsp cinnamon 

Directions:
1. Blend rolled oats on high in a food processor until they are finely chopped. 
2. Using your food processor's grater attachment or a regular grater, grate carrots. 
3. Add grated carrot and the rest of your ingredients to the food processor and blend together well.
3. Remove dough from food processor and roll into balls (makes approx 12 balls depending on size). Put in a sealed container and keep in fridge or freezer. 
Optional: Roll in coconut flakes

    Often, I make beet balls with raw beets & dates as the main ingredients & roll them in beet powder & crushed Brazil nuts eaten as a dessert.

    This is great! I was looking for energy ball recipes a while back and only found blog posts that spent 20 minutes talking about nothing before actually showing the recipe. Would love to see some high protein versions (aside from just dumping protein powder into the mix).

    Allergic to peanuts so I’ll sub almond butter for those! And YES, JAM!!!!! A little dab of jam in the centers would make those PB&J or PPB&J (protein, peanut butter & jam!). yum!

    Absolutely love these ideas! I feel like those Cranberry Tahini ones would be great rolled in cinnamon! (OK, messy to eat, but worth it.) Also, I really think those Carrot Cake ones would be amazing with some of that crystallized ginger and a pinch of ground mace. One of my favourites to make uses roasted unsalted peanuts, Medjool dates, vanilla, smoked salt, carob powder, and vanilla. P.S. Derek, loved your jam idea!!

    Omggg the carrot cake balls are to die for. After one taste I immediately made a double batch. I added 1 pinch of cardamom and nutmeg, and a TBS of maple syrup and it was just sweet enough and helped it bind a bit as well. It tastes almost like a baklava! Thank you!!
