This is actually for every diet or lifestyle. Many non-vegan diets don’t supply enough fiber. I agree with you, no matter which diet you choose, be responsible and evaluate your nutritional intake. I have found a whole food plant based vegan diet to be perfect for me. I enter my food into Chronometer and find I hit my nutrient goals easily. I do supplement B 12 daily.
True, B12 is common among non-vegans as well.

Why have you recommended calcium fortified plant milks if the fortifying ingredient is the same thing that you warn against taking in capsule form? (How is taking a calcium carbonate pill with a meal different from drinking soy milk fortified with calcium carbonate?)

Walnuts worked well because I enjoyed a small handful, but the aftertaste would make me stop before I went overboard. I used to pick walnuts when I was in high school. After a day of picking the nuts would stain my hands which would last for weeks. After starting to eat walnuts, they stained my teeth the same way. I had to get aggressive with an electric toothbrush to mostly take care of that. I stopped eating walnuts.
I personally would rather have stained teeth than a lack of walnuts.
Beans don’t hurt my kidney’s; they hurt my social life. Instead of taking “bean enzyme pills,” I recently tried soaking my beans overnight in water with the contents of a beano capsule in it. It seemed to help somewhat. Next, I’ll try to rinse the bean cooking water three more times, once after each 15 minutes of cooking.
