You will likely find a version of a chia seed pudding recipe on almost every food blog – thick and creamy, with just the slightest hint of seedy texture (similar to tapioca pudding).

Many recipes for chia seed pudding call for chia seeds, plant milk, and a sweetener. There is nothing wrong with that, but if you boost the amount of protein and healthy fats and leave out the sugar, you will feel satiated and satisfied for longer.

      I have wanted to try basil seeds forever! Do they act exactly like chia seeds? I know they have a gel-like texture when soaked in water. Just wondering whether they have the same potency?

      @@NutritionRefined I’d say basil seeds are quite different. They produce cooling and filling effect, while chia seeds are energy boosters. Basil seeds soak much faster though, and they expand into a big gelatinous mass. I prefer them, because I’m on a lectin free diet.

    They say we can’t absorb nutrients from small seeds unless we grind them up. What about chia seeds in puddings like this? What’s your opinion?

      A great question – the surface of chia seeds is delicate and easily breaks apart when exposed to moisture, so they are typically prepared with liquids, such as nut milk. In this way, they are absorbed and digested well in their whole form, unlike flax seeds.
